Day 26. A Childhood Memory

Well, I am back from my trip...so I'll get going again. We had a wonderful time, I am very tired, but am trying to catch up on a lot of lost sleep!
Okay for a childhood memory...


I think that we as a family like living on top of hills...most of our houses have been perched right on top of a hill! At the particular house this story occurred, our house was on the hill and our barns down at the bottom.
At the foot of the hill, after a heavy rain, a HUGE mud puddle would form. It was like a small pond. In fact, sometimes the water would stick around for some time, and in the winter would freeze-then we would ice skate on it. But, in the summer-it was our swimming pool! We would spend hours swimming in this mud puddle. We had so much fun! Daniel and Timothy got a pice of wood and fashioned a diving board. We were young, I would say Daniel was maybe 7 years old, tops. It was Jill's turn to use the diving board, but being a little toddler, she was taking her time at the end. (It was maybe 6 inches off the ground) I was the impatient 3 or 4 year old and didn't want to wait any longer. With Jill at the foot of the board, I took my run and jump and...knocked Jill head first into the water. I thought it was so funny! Jill didn't think so...
It is funny, because my mom actually had the video camera out, and got it all on tape. We lost the tape several years ago... =( I am still hoping to find it, because it really was so funny to watch. 
The other favorite part of swimming in the puddle was...When we were done, we would walk up to the house, my mom would bring a big blanket, we would all sit on it and she would give us a ride on the "Bath-y Express"...she would pull us into the bathroom and stick us in the tub, with our clothes on. We were so muddy! She would rinse the mud out of our clothes, and then give us our individual baths.
 It may not sound as fun now, but what a way to make a little girl/children happy! I was about 3 or so when we did this, but it is such a vivid memory!

Day 25. A Recipe

Burst o' Lemon Muffins



Ingredients

  • 1-3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (8 ounces) lemon or vanilla yogurt
  • 1 egg
  • 1/3 cup butter, melted
  • 1 to 2 tablespoons grated lemon peel
  • 1 tablespoon lemon juice
  • 1/2 cup flaked coconut

  • TOPPING:
  • 1/3 cup lemon juice
  • 1/4 cup sugar
  • 1/4 cup flaked coconut, toasted

Directions

  • In a large bowl, combine the flour, sugar, baking powder, baking soda and salt. In a small bowl, beat the yogurt, egg, butter, lemon peel and lemon juice until smooth; stir into dry ingredients just until moistened. Fold in the coconut.
  • Fill greased muffin cups two-thirds full. Bake at 400° for 18-22 minutes or until golden brown and toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
  • In a saucepan, combine the lemon juice and sugar; cook and stir over medium heat until sugar is dissolved. Stir in coconut. Using a toothpick, poke 6-8 holes in each muffin. Spoon the coconut mixture over muffins. Serve warm or cool to room temperature. Yield: 1 dozen.
These are my absolute favorite muffins!!! I love to make them...and eat them! You have to try them out!

24. A Movie No One Would Expect Me To Love

I don't know if I could really name one movie, but once in a while I like to watch a swashbuckling kind of movie/tv show. I love the old Disney show called Zorro. Maybe a Shakespeare type movie or something like that, or a movie based in the "Bible" times, like Ben Hurr or something like that...

I don't really know... =)

I want to be remembered as a person who loved God and my family. A person who loved the hurting people all around me. A person who loves fun and laughter, and a person who would be willing to give my life for those I love.

Since I have Paso Finos...I like looking at different Paso websites. If I ever have baby horses again...I want to breed my horses to the Palomino stallion and either the Pinto or Black stallion. I even have names picked out for my next babies. =)

How about the new snowfall? Here in the Detroit area we got about 7 more inches...on top of our 2-1/2 feet! We were getting about an inch every 30 min.

Day 21: Something I know I do differently than most people.

Sleep...
How can a person sleep different than anyone else??? Well, do you sleep with a pillow propped under your arm? Nope, I didn't think so. ;) Ever since I tore my rotator cuff back when I was 18, I have had a sore right arm. I had surgeries in 2009 and 2010 as most of you know. I found that having my arm at the same level as my body was very painful. Part of it was that after my surgery, I was put in a sling that had a pillow built in so that my arm couldn't come down-it would re-tear the muscle. I got used to having my arm supported by something...all of this leads to that...yes, I sleep with pillows under my arm. =)


I think that's something I do differently than most people. =)

Day 20. A Hobby of Mine

Well, as you all know...I love reading. That would be my first hobby...I also love to bake delicious goodies! I have three horses, so hanging out with them in the pasture, brushing them, and riding them would have to be another hobby. In the winter, I crochet scarves...

Day 19. A Talent of Mine.

Not to toot my own horn...but I am really talented at being a big sister. =) I love being an older sister, I am really good at running a household. If there is a big job to be done, you can count on me and my siblings to get it done. It's funny, because as soon as I see that the house or yard (or something) needs to get cleaned, I step into action, and give everyone jobs...and we get it done fast! My siblings really listen to me-so that helps! =) 


I guess that's it for now...I think I am going to shovel some snow. =)

Day 18. A Time that I felt Passionate and Alive.

I love nature, I think that every time I see a magnificent deer, a beautiful flower, a huge fish, the stars shining so brightly on a clear summer night, these are times I feel so alive, and passionate about life. Part of the amazingness of it, is that I realize that God himself created all these things, and He is the God that I serve. One of my favorite songs has this line... "You placed the stars in the sky-and you know them by name." That is so true, He knows the names of every star, even the ones that we cannot see. 


Now I am preparing myself for a snowstorm! How about you????
